Why do productivity apps stop working after a few weeks?

Usually because the app was set up for an ideal week rather than a messy one. A system that survives interruptions needs a single inbox, a short daily list and a weekly review — the app choice matters far less than those three habits.

Do I need separate apps for tasks and notes?

Not necessarily, but the two behave differently: tasks want dates and closure, notes want search and permanence. Combined tools work well when your notes are mostly project material rather than reference material.

Is time tracking worth it if nobody bills my hours?

For a few weeks, yes. Tracking is a diagnostic, not a permanent habit — it tells you where your attention actually went, which is usually not where you assumed.
